OK, I love love this interview <3 I've been following Alexis since the Tasty days so delighted for this new cookbook. A fun one for a speedy dinner, there's a version of a garlicky lemony breadcrumb over spaghetti and a fried egg on top that just ticks all the boxes and is ready in like 15 minutes. My favorite thing to make when I want food NOW but want more than just buttered noodles!

Fancy grilled cheese. Some sharp cheddar, prosciutto, thinly sliced apples. It feels fancier than a sandwich and hits all the notes I’m looking for.

Love this interview and excited for the cookbook! When I don't want to cook at all, I toss fresh or frozen veggies in the oven with a spritz of EVOO and some garlic salt. Instant comfort and nutrition!

I live *just* outside of the Catskills! I often make chicken tikka masala (using jarred sauce) when I want something yummy but quick and easy for dinner

My lazy, go-to dinner is steamed shrimp with Old Bay + some type of roasted potato or veggie. Dinner can be done in less than 15 minutes.

When it’s hot and I’m too tired and sweaty to cook, I love a summery dinner sandwich: fresh bread (or a leftover croissant), burrata, sliced peach, drizzled with Gaby Dalkin’s basil vinaigrette.

When I’m too tired to cook, we have a “picnic.” I get a variety of cheeses out of the fridge, add some really crusty bread from the bakery across the street, slice up some local tomatoes with basil from the garden and fresh mozzarella, and put some prosciutto and sliced soppresetta on a platter. Slice up some fruit that’s in season, and grab olives and roasted peppers from the fridge. Break out the fancy crackers from the pantry. Open a bottle of wine. It’s perfect. :)

Chopped salad in the summer. Any (and all) the veggies you have, chopped. Nuts, cheese and/or leftover chicken on top for protein. A simple vinaigrette for dressing. Done and yum.

Ok, maybe too many convenience foods, but steamed green chile/cheese tamales (from Trader Joe's -- they're surprisingly yummy!) with a big salad of mixed greens/pickled red onion/chopped tomato, dressed, dumped on top of the tamale, and a side of Amy's canned black beans, with a drizzle over that of whatever good salsa I happen have in the fridge.
