I keep the freezer stocked with “patties”: puff pastry triangles stuffed with minced chicken, bell pepper, and nuggets of cream cheese. Popping those in the oven have saved me many a time!
I like to whip up a little cheese plate with whatever cheeses I've got on hand, some olives & nuts! Of course unexpected guests of the dairy-free/vegan variety challenge my go-to
Oh I chose to deactivate it about six weeks ago. I was dealing with a flood of harassment and it just wasn't great for my health at this time. I may find myself back there in a few months time. We'll see how I feel!

For me, I always have cheese & crackers on hand, along with fancy mixed nuts. I also may add a jar of olives or some bruschetta to spread on a cracker or two. 😉 Thanks to everyone else for their ideas, too.
I make a quick dip with Greek yogurt + melted butter and brown sugar (maybe cinnamon?) and serve it with sliced fruit (apples and/or strawberries, depending on the season) and graham crackers (or Teddy Grahams!). It's sweet, snacky, and made of things I always have on hand.
sourdough discard crackers (super easy to make following my once a week starter feeding) and a tub of whipped ricotta. Cut up some apples and maybe some cukes.
I keep homemade chimichurri in the freezer. I love it on anything, but for a quick snack I’ll thaw it out and spread it on toasted Ezekiel muffins, add an egg and cheese for the yummiest egg sandwiches.
Also, I try to keep our local market’s truffled Marcona almonds on hand. Serve with fruit or a handful of chocolate chips for that salty / sweet combo that’s divine!
We love an easy charcuterie in our house: Olympia Provisions sausage (Nola or Loukanika), Beecher’s flagship cheddar, Wensleydale with cranberries, and crackers.
Celery stuffed with Trader Joe's cheddar cheese with jalapeño, an offering of whatever cheeses are in the ice box, and a bottle of wine. If I have them, I'll thinly slice cucumbers, top with cream cheese, and a grind of HEB garlic pepper. If I have tortilla chips, I ALWAYS have queso makings in the pantry, so queso and chips it is with margaritas or resposado rocks!
